What "running hot or cold" actually means

Ovens don't hold one steady temperature. They cycle. The heat climbs past your setpoint, shuts off, drifts down, then fires again. A normal swing is roughly 25 degrees either way. That's fine for most cooking. Drift is different. Drift means the average is wrong: everything browns too fast, or nothing browns at all. Some ovens also preheat correctly and then lose control halfway through a long bake. Note which pattern you have. Write down what you set, what the display says, and how the food came out. That detail narrows the cause more than anything else you can tell us.

Cause one: calibration and habits

Start with the cheapest possibility. Many ovens have a user calibration setting buried in the control menu, and it can be shifted by accident or set by a previous owner. Check your manual for the offset option. Beyond that, look at how you bake. A dark metal pan browns faster than glass. Racks crowded with two sheets block airflow. Opening the door to peek dumps heat fast, and in a humid Atlanta kitchen the recovery takes longer than you'd think. Also confirm you aren't leaving convection on for a recipe written for standard bake. Fix these and some "broken" ovens turn out fine.

Cause two: the temperature sensor

Most electric ovens use a thin metal probe that sticks into the upper cavity. The control board reads its resistance and decides when to heat. When that sensor ages or gets coated in baked-on grease, the reading drifts. Symptoms line up with a sensor: the oven is consistently off by 40 or 50 degrees, or it overshoots badly then undershoots. Sometimes the probe gets bent against a rack and touches the wall, which reads hot. You can look at it with the oven cool and see if it's obviously bent or crusted. Don't tug on it. Replacing one is a straightforward job for us.

Cause three: heating elements, igniters, and door seals

On an electric oven, a bake element that's partly failed still glows but puts out less heat, so the oven never quite gets there. Broil-only browning is another clue. On a gas oven, a weak igniter opens the valve slowly, and burner cycles get long and uneven. That one is ours to handle, not yours. Then there's the door. Run your hand near the closed door while the oven is hot and feel for escaping heat. Look at the rubber or braided gasket for gaps, tears, or flattened spots. Check the hinges: a door that doesn't sit square leaks constantly and the oven runs cold trying to keep up.

Safe checks versus what we do

Safe for you: put a standalone oven thermometer in the center rack, run a 350 bake for 30 minutes, and read it. Repeat at 425. Clean grease off the cavity walls. Inspect the gasket and hinges. Confirm the calibration setting. Stop there. We take it further with a probe meter that logs the full heat cycle, so we can see overshoot and recovery rather than one snapshot. We measure sensor resistance against spec at temperature, check element draw, and watch relay behavior on the control board. How far off is too far off?

A swing of about 25 degrees around your setpoint is normal cycling. If a standalone thermometer shows the average is 35 degrees or more off your setting, or the oven never reaches temperature, something needs attention.

Can I just set the oven higher to compensate?

It works for simple roasting. It doesn't work for baking, because the drift often isn't the same at every temperature. You'll guess wrong at 425 after calibrating your habits at 350. Better to fix the cause.

Does self-cleaning damage the sensor or control?

The cycle runs very hot and stresses sensors, gaskets, and door latches. It doesn't usually cause failure by itself, but it can push a marginal part over the edge. Many temperature calls arrive right after a self-clean.
